Simple Summer Dinner Ideas

The summer is one of the most desirable times to eat outside with good company and tasty food. I’m going to show you all a few dishes I threw together. All of these meals I made in Berlin 🙂 Honestly there was nothing better than sitting outside with my boyfriend and his family and enjoying food together.

Chickpea & Rice Stuffed Bell Peppers

What you will need: peppers (red, orange or green), rice, chickpeas, vegan cheese, spices (I love sriracha)

I love this recipe because it is healthy and made solely with whole foods. It is also very easy to make. All you need to do is prepare the rice by boiling a 1:2 rice to water ratio, then immediately simmering it for around 15 minutes. When the rice is done, all you need to do is scoop rice and chickpeas into your bell peppers, given that they are hollowed out. You can add whichever spices you like depending on your tastes. I added a lot of garlic and sriracha because I like intense, spicy flavors. However, cumin, ginger, curry would also be very fitting.

I baked my peppers for about 30 minutes in the oven at 400 °F and at the end, sprinkled some vegan cheese on top. Very tasty and I loved the idea of eating something out of a pepper.

Greens & Mango Salad with Falafel

What you will need: Field salad, mangos, falafel, olive oil, lemon, salt

I love this salad because it is SO simple and only needs about 10 minutes to prepare. First, start off by preheating the oven to 400 degrees, then pop however many falafel you want to eat into the oven. Bake them for about 5 minutes. While they are baking, throw your field greens into a big bowl and slice up some mango. Dress with olive oil, lemon, salt and a little pepper if you’d like. That’s it, enjoy!

Schupfnudeln with Curry-Tofu and Broccoli

What you will need: schupfnudeln (or gnocchi), broccoli, tofu

This vegan meal makes a perfectly hearty/healthy dish. I love it because it is simple and very simple to prepare. I started off by coating my broccoli in olive oil, garlic, and salt and pre-heating the oven to 400 °F (or around 200 celsius). In the meantime, I chopped up my curry-tofu into cubes and started heating a pan for the schupfnudeln.

After I placed the broccoli in the oven, I started heating up two pans with a little olive oil. Note that the broccoli need around 15-25 minutes in the oven depending on how crispy you like it. Next, I started frying the schupfnudeln and the tofu separately in two pans just until they start to brown. After about 20 minutes, my broccoli became perfectly browned. Next I put everything into smaller dishes and served hot 🙂 This meal definitely pairs nicely with a glass of red wine.

What you will need: anything you want!

The joy of picniks is that you can literally have anything you want so get creative with it. My favorite thing to do is spread some avocado on some seedy rolls and top it with cucumber, fresh tomatoes, and other yummy veggies. My boyfriend, on the other hand, prefers meat and cheese haha. Have some fun with what you bring!
