I’m sure most people know how to make avocado toast already. However, I tried something a bit different to mix up my usual routine.
First off is to purchase some tasty ingredients. I bought half a loaf of flax-sunflower seed bread ($3.50) from the Union Square farmer’s market, avocados from Whole Foods ($2.50 each), free-range eggs from Trader Joes ($3), and a carton of freshly picked peaches also from the farmer’s market ($6 for 6 peaches).
Secondly, I mashed up some avocado into a tiny bowl along with some minced garlic, sea salt, and pepper. While doing so, my one egg was frying in some olive oil and I popped my toast into the toaster for a few minutes until it became brown and crispy.
Lastly, when the eggs and toast was done, I spread my avocado onto the toast, flopped the egg on, cut up the peach, and placed it all onto a large Ikea plate. This avocado toast with an egg and peaches makes a quick, easy, and healthy breakfast. This meal came out to about $3 which is definitely a lot cheaper than spending $20 to get the same dish at brunch. I hope you enjoy this as much as I did!
